The story starts in 1987, when Jay Lieser — a Buffalo, New York native and Indiana University student — decided to bring the Buffalo chicken wing to Bloomington during his junior year. He named the restaurant after his grandfather, Louie Lieser, and the iconic mustachioed logo on everything from the sign to the merch? That's a caricature of Grandpa Lou himself, cigar and all. Using original family recipes and homemade sauces, the restaurant grew from a spot on 17th Street into a Bloomington institution at The Gables Building, and eventually earned a spot on USA Today's list of the top 10 wing joints in the country. The Carmel location carries that legacy forward with serious Hoosier credibility behind it. Co-owner Nick Williams is an IU grad and former BuffaLouie's employee who clearly never forgot where the best wings in the state came from. Joining him as a partner is Yogi Ferrell — Indiana University basketball standout, NBA veteran, and a name that carries real weight in this state. Walk through the door and you'll immediately understand why that partnership makes sense. The walls are lined with Indiana University sports memorabilia and decor that gives the space the feeling of an extension of Assembly Hall's spirit. Now, about those wings. The menu is admirably focused. You can order traditional bone-in or boneless, in sizes ranging from a Single (10 wings) all the way up to a Super Bucket of 100. The sauce options are where things get interesting — and extensive. The Buffalo lineup runs from Mild through Medium, Hot, TNT, Volcanic, and all the way up to the ominously named Loucifer. The BBQ column is anchored by Mrs. Louie's Famous Sweet Q, with Q variations across every heat level. The Exotic category covers everything from Teriyaki and Honey Garlic to Korean Q, Rasta Jerk, and Asian Zing. Dry rub fans get Montreal Steak and Memphis Q. There is a sauce for everyone, and there is no excuse to order timidly.

The rest of the menu is built to complement the wings rather than compete with them. Chicken sandwiches come grilled, crispy, or spicy crispy, with standouts like the Buffalo Style (provolone and medium buffalo sauce) and The Pacer Parm (marinara and provolone). Burgers are two all-beef quarter-pound smash patties — the lineup includes the All-American, the Sweet Lou smothered in Mrs. Louie's Famous Sweet Q, The Main St. with jalapeno and avocado, and the HeisMendoza.
